Sugo di Pomodoro I

  • Canned peeled tomatoes,
    seeded and diced
  • High quality olive oil
  • 1 clove of garlic
  • Salt, freshly ground pepper
  • Sugar
  • Basil
  • Butter

Heat the oil on a medium heat in a saucepan. Add the finely chopped garlic clove, stir in the tomatoes after about 30 seconds, season with salt and pepper and cook on a high heat for about 3 minutes. Add a small breeze of sugar.

Finally fold in the basil leaves cut into strips, steam for another minute and stir in a small piece of butter.
